I am all for an easy meal and I do love pizza but if I am trying to provide healthy meals for myself and my family, let’s be honest, delivery pizza is not on the list.

I have found that if I make healthy snacks and salads ahead of time, we all eat healthier and I am less stressed in the afternoon, which allows me to be more present with my children and have more patience.

Living in Greece for a year, I got fully addicted to the greek salads there and the way they made them with no lettuce. Without the lettuce, which goes soggy, these salads can be made ahead of time, complete with dressing, and stored in the fridge for a couple of days. They are full of flavor and a household favorite.

Since we are a family of 4, I make 8 salads at a time for 2 days of salads. When my girls are starving after school or practice, they can grab their salads whenever they like. This gives them a great healthy snack after school and buys me time to make the rest of dinner without hangry children.

If you have fresh basil available instead of dried, a chiffonade (finely cut) of basil on the top upon serving provides delicious flavor and a nice presentation.

  • Cutting Board
  • 4 salad bowls
  • Sharp knife

Ingredients

  • 1 English Cucumber Quartered and chopped
  • 2 Bell Peppers (any color) Diced
  • 1 pint Cherry Tomatoes Halved
  • 1/2 Sweet Onion Diced
  • 1 chunk Feta Cheese crumbled (use as much as you like!)
  • Olive Oil drizzled
  • Champagne Vinegar light drizzle
  • Basil Dried or Fresh (fresh is always best)
  • Pepper to taste

Instructions

  • Prepare all vegetables as noted.
  • Top with crumbed feta cheese.
  • Drizzle olive oil and champagne vinegar.
  • Top with fresh or dried basil.
  • Add a touch of pepper (optional)
  • Enjoy!
